This champagne has a lovely pale yellow color with shades of old gold. Numerous trains of fine bubbles rise nonchalantly towards a persistent cordon. The nose is rich and complex with hints of marmalade fruits, the plum marries with Burlat cherry and blood orange. When aired, a few touches of toasted almonds, warm sponge cake and lime blossom honey add complexity. The palate is generous with a nice fruitiness of vine peach in syrup, orange and white cherry jam.
Tasting Good length, this champagne will work wonders with turbot in sabayon, with kidneys in champagne, with semi-cooked foie gras or with asparagus risotto.
Serve between 6 – 8 ° C
